Ingredients:


1 Eggplant


4 ounces Mozzarella Cheese


Parmesan Cheese to taste

Directions:

Cut Eggplant into Slices across

Microwave slices on plate for 1 1/2 minutes on high.

Top eggplant pieces with Mozzarella cheese and sprinkle with Parmesan Cheese.

Put under the broiler for about 20 seconds to melt the cheeses.
